LOBSTER BURGER ROLL STYLE

PREPARATION

  1. For the mayonnaise, either make a homemade aioli or with a market mayo, add fresh garlic puree and grill a jalapeno on the BBQ and pass it all in the food processor for 1 cup of mayonnaise. Salt and pepper to taste.
  2. Brush the bread with garlic butter and then grill on the BBQ.
  3. In a bowl, combine the roughly chopped lobster meat with the grilled jalapeño aioli, lemon juice and zest, chives, salt and pepper, and, most importantly, wild tide spice. Reserve a little aioli for dipping your fries.
  4. Fill the hamburger buns with the lobster filling, then add the red onions, tomato and lettuce.
  5. Serve with fries, salad or nacho chips
