PREPARATION
- For the mayonnaise, either make a homemade aioli or with a market mayo, add fresh garlic puree and grill a jalapeno on the BBQ and pass it all in the food processor for 1 cup of mayonnaise. Salt and pepper to taste.
- Brush the bread with garlic butter and then grill on the BBQ.
- In a bowl, combine the roughly chopped lobster meat with the grilled jalapeño aioli, lemon juice and zest, chives, salt and pepper, and, most importantly, wild tide spice. Reserve a little aioli for dipping your fries.
- Fill the hamburger buns with the lobster filling, then add the red onions, tomato and lettuce.
- Serve with fries, salad or nacho chips
