Ingredients

  • 250 grams of inside round of beef (very fresh)

Toppings:

  • 1 tbsp pre-cooked chopped bacon
  • 2 tbsp pre-cooked chopped chorizo
  • 2 tbsp chopped French shallots
  • 1 tbsp fried capers
  • 2 tbsp chopped pickles
  • 3 tbsp Monterey Jack cheese cut into small cubes
  • 1 tbsp chopped fresh parsley
  • 1 tsp fresh chopped chives
  • 1 pinch of pepper
  • 2 pinches of sea salt
  • 4 pinches of La Poche Bleue Texan Spices
  • 1 tbsp mayonnaise
  • 1 tbsp of Blue Pocket Sauce
  • A drizzle of Worcestershire sauce
  • A drizzle of olive oil
  • A few drops of Tabasco sauce (to taste)

PREPARATION

  1. Chop the meat with a knife on a very clean cutting board.
  2. Place in a bowl and mix all the ingredients together.
  3. Taste and adjust seasoning
  4. Serve with croutons or even nacho chips
  5. Serve with arugula salad, lemon vinaigrette and parmesan shavings
