BoeufBEEF TARTAR WITH TEXAN SPICES

Ingredients
- 250 grams of inside round of beef (very fresh)
Toppings:
- 1 tbsp pre-cooked chopped bacon
- 2 tbsp pre-cooked chopped chorizo
- 2 tbsp chopped French shallots
- 1 tbsp fried capers
- 2 tbsp chopped pickles
- 3 tbsp Monterey Jack cheese cut into small cubes
- 1 tbsp chopped fresh parsley
- 1 tsp fresh chopped chives
- 1 pinch of pepper
- 2 pinches of sea salt
- 4 pinches of La Poche Bleue Texan Spices
- 1 tbsp mayonnaise
- 1 tbsp of Blue Pocket Sauce
- A drizzle of Worcestershire sauce
- A drizzle of olive oil
- A few drops of Tabasco sauce (to taste)
PREPARATION
- Chop the meat with a knife on a very clean cutting board.
- Place in a bowl and mix all the ingredients together.
- Taste and adjust seasoning
- Serve with croutons or even nacho chips
- Serve with arugula salad, lemon vinaigrette and parmesan shavings
